[0:00] Meg. [0:05] Have a good day. [0:07] First day, grand opening. So far so [0:09] good. Feels good to finally be open. [0:12] It's been a lot of work getting to this [0:14] point. A lot of renovations, a lot of [0:16] learning, a lot of hiring, but it's [0:18] really nice just to be in the kitchen [0:20] and get things going finally. We're [0:21] happy to start making uh breakfast again [0:23] for everyone. We got space to breathe. [0:26] We got space to move around. We feel [0:28] like it's just going to make us more [0:29] efficient. We'll be able to get food out [0:30] even faster than we were before cuz [0:32] that's a big priority for us. We're in [0:34] East Bloomington, Portland and American [0:36] Boulevard, very close to the airport, [0:38] Mall of America. We just felt it was a [0:40] really good spot. A lot of traffic over [0:42] here, not much food, so we're really [0:44] excited to be in this area. [0:47] 3 2 1 cut. [0:52] I get to do a lot of ribbon cutings. I [0:54] love all of them. This one feels special [0:55] because we've seen Scrambling Egg from [0:57] the beginning basically first of all in [1:00] front of the city council at a listening [1:02] session. Then we saw the food truck [1:04] develop and grow. We saw them all the [1:06] time at the farmers market. And then [1:07] when the Hatch Bloomington program [1:09] started, Nick and Grant jumped right in [1:12] and did such a fantastic job putting [1:14] together the business plan, getting [1:16] support from the community. And now it [1:18] is so great to see the culmination of [1:20] all their work and winning the Hatch [1:22] Bloomington program. Hatch is the city's [1:24] retail pitch competition and it was [1:26] created as a way for the city to invest [1:29] and inspire local entrepreneurship. Part [1:32] of the reason that the city has [1:34] committed resources to the hatch [1:36] competition is to make sure that small [1:38] businesses and entrepreneurs here in [1:40] Bloomington feel supported. We were [1:42] really excited to work with the [1:43] scrambling egg folks because they had a [1:46] really clear business idea and they just [1:48] needed a little extra support through [1:49] some financial assistance to make it [1:51] happen. So, we started over two years [1:53] ago now in our little food trailer. And [1:56] then eventually, you know, we kept [1:57] getting busier and busier and then we [1:59] realized, you know, okay, we got to get [2:01] a storefront. And then thankfully, we [2:03] heard about the Hatch Bloomington [2:04] competition where the winner gets [2:06] $100,000 to invest in our business. And [2:09] we were like, that'd be perfect for us. [2:10] That'll give us enough money to find the [2:12] right space, open up, and kind of just [2:14] take that next big step. The city's been [2:16] really nice. And I mean, just to have a [2:18] program like Hatch Bloomington is [2:20] really, really cool. Well, it shows [2:21] that, you know, the city's invested in [2:23] small businesses. They want to bring [2:25] small businesses into the city because I [2:27] mean, small businesses are really, [2:29] really important for the community and I [2:31] think that says a lot to the city of [2:32] Bloomington. And I hope more small [2:34] businesses choose to open here and grow [2:36] and see what they can do in the city. [2:39] We're just kicked off year two of the [2:41] hatch competition and we'll be planning [2:43] for the top 10 coming on August 5th. So [2:47] residents and community members can gear [2:49] up and be prepared to join to watch [2:51] those top 10 pitch competition and also [2:53] to watch the activities online. [2:55] Congratulations to Nick and to Grant and [2:58] the entire crew here at Scrambling Egg. [3:00] And well done. [3:01] Scrambling Egg. We got the best [3:02] breakfast in the state.
