Scramblin' Egg currently operates as a food trailer business, but Veitenheimer is ready to take the next step. He described the concept as "a customizable breakfast place where we prioritize quality, speed, and affordability," offering customers the ability to build their own breakfast meals.

The company's expansion plans center on East Bloomington, where Veitenheimer said the team is "working on getting locked in" a permanent location. A brick-and-mortar store would bring significant operational improvements over the current food trailer model. "If we ever run outta chicken or something, we can just start making it right away," Veitenheimer explained, highlighting how a full kitchen would eliminate supply constraints that currently limit production.

Veitenheimer's ambitions extend well beyond a single Bloomington location. "I think we could take Scramblin' Egg, make it a national chain, honestly," he told the council. He emphasized that the $100,000 competition prize would be transformative for the business. "With that $100,000 we're just gonna be able to take that next step much quicker," he said.

Veitenheimer's path to entrepreneurship includes time spent in Colorado, where he attended college, lived, and purchased the food trailer that launched Scramblin' Egg. He later moved back to Minnesota to pursue the business opportunity in Bloomington. The presentation represents a formal pitch to city leadership as the company seeks support for its expansion plans.
